Javier de las Muelas (Barcelona, 1955), trends setter and successful businessman, is considered as one of the most prominent cocktail masters in the world. He gives conferences at gastronomy forums and business schools, collaborates with media and acts as consultant to leading F&B companies. Besides, the master classes imparted by his team at Dry Martini The Academy have become him a reference in the universe of cocktails & drinks.
Javier de las Muelas is the founder of Barcelona’s notorious cocktail bar Gimlet and owner of Dry Martini, also located in Barcelona, which has been nominated for seven consecutive years in the World´s 50 Best Bars list, a privilege only reached by 6 bars worldwidd and being the first one achieving it in Continental Europe Within the same spirit of tradition, class and elegance, he created Dry Martini By Javier de las Muelas at Hotel Gran Meliá Fénix, in Madrid, Dry Martini San Sebastián at Maria Cristina Hotel, Dry By Javier de las Muelas at Gran Meliá Victoria in Palma de Mallorca.

Working as a gastronomy consultant, Javier has consolidated several alliances with important hotel chains such as Melia International Hotels being present in Madrid and Palma de Mallorca as already mentioned, Four Seasons Resort which started with Sundara, the beach club at its complex at Jimbaran Bay (Bali) and continued in December 2013 with One Ninety By Javier de las Muelas, at the Four Seasons Hotel Singapore. Also with Paradores de Turismo de España which begins on 2013 in Aiguablava with the new Restaurant & Beach Club Mar i Vent and continues in December same year, with the new venue Dry Snow in Arties nearby Baqueira Beret Ski Station and finally with Starwood with whom he opened The Dry San Sebastian at the Hotel María Cristina and recently has consolidated the alliance with the grand opening of Dry Martini By Javier de las Muelas at the Sheraton Rio Hotel & Resort located at Leblon in Rio de Janeiro.

On December 2014 Javier is launching DROPLETS® By Javier de las Muelas which is a contribution to the Cocktail & Food Flavoring world. It is the result of two years of efforts in research and development. DROPLETS ® By Javier de las Muelas is 100% natural, no alcohol and it opens endless possibilities in gastronomy, both cooking and mixology.

In 2015, the alliance with the Eurostars Hotels group was consolidated with the opening of THE CORNER by Javier de las Muelas in Córdoba, Granada, Toledo in Spain, and in Munich, Berlin, Prague, Lisbon and Brussels in Europe. Also in the hands of the hotel group Starwood Hotels & Resorts Worldwide in San Sebastian (Hotel Maria Cristina) and with the opening of the Dry Martini by Javier de las Muelas at the Sheraton Rio Hotel & Resort, located on the beach of Leblon, in pure heart of Rio de Janeiro. In August 2015, the inauguration of Dry Martini by Javier de las Muelas took place at the Meliá White House London. Not forgetting to mention the Hall0 space in the Monument Hotel and Casa Fernández and Montesquiu restaurants, all of them in Barcelona.
2017 has been a year of success and projects following the publication of his book “Cocktails & Food” and the creation of “Cocteleo By Javier de las Muelas Dry Martini” for Frit Ravich. Also with the opening of a new and exciting project: Dry Martini in San Luis Potosí (Mexico) by the hand of the Hilton group with its brand CONRAD Hotels & Resorts.
The 2018 was the year of the celebration of the Dry Martini Barcelona 40th anniversary and two new projects: the opening of the Dry Martini at the Majestic Palace Hotel in Sorrento (Naples) and Dry Martini at the Four Seasons Hotel Hangzhou at West Lake in Hangzhou, China.

In this 2019 Javier receives the nomination as a new member of the Catalan Academy of Gastronomy and Nutrition as recognition of his career and as a promoter of heritage and new horizons in the gastronomic field.

In this same year, he receives two great awards for his career such as: the award for the recognition of the sector for his career and his contribution to make the spirits a natural, essential and sublime ingredient at the hands of FEBE Federación Española de Babidas Espirituosas (Spanish Federation of Spirits).
And the “HELEN DAVID LIFETIME ACHIEVEMENT AWARD” the highest award in the world of cocktails in recognition of his career at the 13th annual gala of the SPIRITED AWARDS of THE TALES OF THE COCKTAIL in New Orleans in the most important contest of cocktails worldwide.
